COOKING WITH BERTY - Cheese scone round...    For 8 portions : 8 oz/225g plain flour, 4 level teaspoons baking powder, 1/2 level teaspoon salt, pinch dry mustard, 2oz/50g butter, 4oz/100g grated cheddar cheese, approx. 1/4 pint/150 ml milk...    To glaze, 1 egg...    For the topping, 1 oz/25 g grated Cheddar cheese...    now how to do it!...    1) Sieve the flour, baking powder, salt and mustard together and rub in the butter. 2) Add the grated cheese and sufficient milk to make a soft dough, 3) Knead lightly and roll out to 1 inch/2 1/2 cm thickness, 4) Cut out rounds with pastry cutter, 5) Brush egg on top, 6) Sprinkle grated cheese on top, 7) Bake for 10-15 mins at 220 C until well risen and golden brown.......
